When I was a kid in NYC every Italian wedding we went to had one of two fillings in the wedding cakes. The Italian Custard or Cassata.
The custard came in chocolate or vanilla. The Casatta is a Ricotta cheese filling made with citron and chocolate chips. If you have ever had a cannoli you have had the Cassata filling.
The cassata cake is usually iced with three different frostings. Fondant, A powder sugar and cream Icing or whipped cream. Marzipan fruit are placed on the top for decoration. I guess for fertility. So don’t eat the fruit.
Only kidding! I say that because I LOVE marzipan. So leave it for me.
I am in love with this cake. It brings wonderful memories of my childhood. I make it only for the special people in my life. The graduation party meant a lot so it’s worth the extra effort.
